Saturday was a great day. The forecast was warm and sunny (always a plus in January), and we had absolutely no obligations stopping us from enjoying a glorious day outside. Any Saturday spent running and playing in the sun needs to first be fueled correctly: pancakes. I originally made these for Baby Snob, but turns out they were so good, I ended up eating the rest myself.
What I loved about these pancakes was how flavorful they were. I wouldn’t normally classify a pancake as something stuffed full of flavor, but a simple pancake recipe is actually an empty canvas ready for you to create your favorite flavor combination. For these, I chose apple and cinnamon.
Apple Cinnamon Yogurt Pancakes (adapted from here)
1 cup whole wheat flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 1/4 cup unsweetened vanilla almond milk
1/4 cup unsweetened apple sauce
1 6oz container Chobani apple cinnamon Greek yogurt
1. Place all ingredients in a large bowl and stir together until combined.
2. Heat a skillet over medium heat and melt a tablespoon of butter. Pour 1/4 cup of the batter and cook until there are bubble throughout (about 3 minutes) and then flip to cook other side.
To serve, drizzle with warm honey and a sprinkle of cinnamon.
There is something about pancakes that instantly guarantees your day is off to a good start. Between these and my lemon curd cornmeal pancakes, I foresee many more pancake mornings in my future.
